The Cathar country is, for me, one of the most soul stirring regions of France. It may not have the hype of Provence, but it doesn't mind - for here the stillness is what enables its visitors to feel the palpable and remarkable history, to enjoy its beauty. With the Pyrenées standing along the south as a blue, distant horizon, the sun-drenched expanses feel somewhat protected and remote from the rest of the world, too noisy and crowded. The simplicity of the Cathars lends itself beautifully to the Pavillion Du Château **** and in turn ensures the utmost peace and tranquillity.
Pavillion Du Château **** has shared in the rich history of its surroundings. Now restored to its former glory after a war-fraught past, this is a rare combination of luxury hotel and living, breathing history. The Gineste family are now in their seventeenth generation of ownership and have created a warm and homely atmosphere. They have trained their staff in the art of being helpful but not intrusive. My husband and I visited in lovely weather, but surely every season would have its charm. We were able to start the day with a dip in one of the two outdoor pools and take advantage of the bikes on hire. There's also a spa offering private treatments, as well as a Hammam. Classes available include cooking, Qi Gong and yoga. We found it very hard to muster the impetus to explore outside the grounds!
As anyone who knows France will know, food is a serious affair. Breakfast was enjoyed under the dappled shade of trees in the garden patio. Local cuisine is expertly crafted and beautifully presented, and the dining halls are elegant and full of period charm. Our en-suite room was handsome and dignified, yet welcoming and relaxing. Rich reds and golds, were used against a neutral background and complemented by exquisite antique furniture, which we found out were heirlooms handed down from generation to generation. If you were to look for us, you'd probably find us on our private terrace, taking in the serene ambience and the sweeping view, perhaps with a good French coffee or local wine in our hand. At Pavillion Du Château **** we were Count and Countess for a long weekend.
