The humble olive. You may know it from hesitantly perching in your martini glass or stuffed with red pimiento peppers in delicious tapas, however you enjoy this tiny fruit, you’ll know that it packs a punch. Succulent green, burnt maroon, dusky mauve and brilliant black olives grace the trees in the fields surrounding Cortijo LA Organic. Walk down the variety path in Ronda and discover 20 varieties of olive trees originating from different countries, each presenting unique flavours and colours. In Spain, there are more olive hectares than anywhere else in the world and olive oil is a star product of local cuisine.
